Busiate Pasta Making Class + Lunch at Yolan.

Rooted in the culinary traditions of western Sicily, busiate is a hand-rolled pasta closely associated with Trapani and the island’s western coast. Made from a simple dough of semolina flour and water, each strand is traditionally wrapped around a slender tool known as a ferretto, creating the distinctive spiral shape that allows the pasta to capture every element of its accompanying sauce.

Inside Yolan’s kitchen, guests will craft fresh pasta by hand while learning the traditional technique used to shape busiate. Along the way, discover the regional traditions and craftsmanship behind this distinctly Sicilian pasta and its classic pairing with pesto alla Trapanese, a vibrant specialty of Trapani.

Each guest will prepare fresh busiate to take home, along with techniques and recipes for recreating the dish in their own kitchen.

Following the lesson, enjoy a leisurely three-course lunch featuring seasonal salad, busiate with pesto alla Trapanese prepared by Yolan’s culinary team, dessert, and curated wine pairings.
